These aren’t just any nachos—they’re the grilled vegetarian nachos from Yucatan Taco Stand, or as the menu says so perfectly, “crispy corn tortilla chips topped with Chihuahua cheese, aged white cheddar, queso fresco, roasted garlic aioli sauce, lettuce, tomato, cilantro, cabbage, sour cream, guacamole, jalapenos, and onion.” A word of warning: The plate is huge and piled nearly half a foot high, so bring a friend to help you eat them. Yucatan Taco Stand has at least one vegetarian option in each category on the menu—appetizers, Yucatan Favorites, salads, nachos, tacos, burritos, burrito bowls, and grilled sandwiches. On weekend nights, it’s noisy, dark (as the quality of the photo illustrates), and crowded, meaning you might have to stand in line and postpone ordering until a few tables clear out. But for these nachos and a margarita? Totally worth the wait.
