I finally made it to the much-discussed Cowtown Diner in Sundance Square. The short of it is that they have one vegetarian entrée on the menu, and it’s good: The Veggie Plate ($12.95) is a marinated and grilled portobello mushroom topped with smoked Gouda creamed spinach and served with grilled seasonal vegetables; my plate arrived with a few spears of steamed asparagus on it, too. The restaurant’s ambiance is cool, its retro diner décor has a decidedly Western bent. For repeat visits, there appears to be some possibility of conjuring up a vegetarian combination plate, between the meatless appetizers (like hummus, queso, spinach artichoke dip, and deviled eggs) and meatless sides (grilled vegetables, mashed potatoes, peas and carrots, creamed spinach, creamed corn, and macaroni and cheese). Our waiter admitted that he had not yet had such a request but was willing to put together a custom plate.
